Day 7

Today is the seventh day of cooking vegetarian and I'm just beginning to get into it. I wasn't really prepared when I began, so we spent the first 4 days kind of winging it. Thanks to the loan of some good vegetarian cookbooks, I now have a plan at least for the next 5 days!

Tonight we ate another interesting dinner. It was sweet potato enchiladas. They were pretty tasty and very filling. They took a little time to prepare, but that's why I made them on the weekend.

I'm not missing eating meat at all. As long as I get a good dinner, the urge to eat a steak or a chicken just isn't there. For this vegetarian challenge I have to be so much more prepared though, because all the meals I can ever think to make either contain or are centered around some kind of meat product.

  1. You have too much time on your hands. I've been vegetarian for 3 weeks now and my meals consist of pasta with meat free meat balls, quorn, meat free mince (which is very tasty). Bbq have been spicy bean burgers!!! I don't like not being able to have meat when I want - I don't eat lots anyway. The really tester was at Harvester only two choices - pasta or mushrooms with cheese!! Great!! Indian take out - looked at two menus only one had one veg meal. Bring onnext monday!
