Day 7

9/20/09

Today is the seventh day of cooking vegetarian and I'm just beginning to get into it. I wasn't really prepared when I began, so we spent the first 4 days kind of winging it. Thanks to the loan of some good vegetarian cookbooks, I now have a plan at least for the next 5 days!

Tonight we ate another interesting dinner. It was sweet potato enchiladas. They were pretty tasty and very filling. They took a little time to prepare, but that's why I made them on the weekend.

I'm not missing eating meat at all. As long as I get a good dinner, the urge to eat a steak or a chicken just isn't there. For this vegetarian challenge I have to be so much more prepared though, because all the meals I can ever think to make either contain or are centered around some kind of meat product.

Day 3-6

9/16-9/19

This dinner thing has been fine so far. Not eating meat at dinner really doesn't seem to bother me that much at all. I have had a tiny bit of meat while in Costco today; they had samples of deli turkey and havarti cheese, so this isn't a pure vegetarian challenge. It was good, but I was really hungry! I finally made a menu for next week and went shopping for most of the ingredients. Hopefully I can mostly stick to it.

Tonight I made another brand new dish (the rice pilaf was a new recipe). It was goat cheese grits and beans. Both tasted really good and there are leftovers of each. I plan on using the grits to make cutlets and the beans... well, we'll eat those one night!

Pippa seemed to like everything, or at least she didn't say it was yucky. William never eats his dinner, so no surprise there. Tomorrow I have sweet potato enchiladas on the menu. We'll see how that goes.

Day 3: Leftover Rice Pilaf
Day 4: Pasta in Alfredo sauce with bread
Day 5: Homemade pizza/roasted garlic, artichoke hearts, olives, ricotta & mozzarella
Day 6: Goat Cheese Polenta and Black beans

9/14-9/15

Day 1-2

I've started my 30 days of meatless dinners! The biggest challenge for me is coming up with a meal that is nutritious, tastes good and is easy to make. I have a pile of recipe books out of the library and tonight I need to go through them and plan our dinners. I'm kind of excited about this challenge because while I really like meat, I don't have to have it. If a meal doesn't have meat in it, it doesn't bother me. I've never done 30 days knowingly without meat, so this shall be interesting to me and may force me to try some new foods. Who knows, maybe I'll like it! Lets see if I feel any different when it's over!

Day 1: Cashew Rice Pilaf
Day 2: Spaghetti

9/13/09 Go meatless!

Tomorrow I start my 30 days of meatless dinners! Like I said, I may still eat meat, I'm just not going to use it to make my dinners. However, if I don't eat dinner at home, or if someone brings me food, it's fair game. So far I have 1 meal planned. How about 30 days of starving?

9/7/09

So far, so good! I haven't bought any Pepsi yet, I'm merely just finishing off the 8 small bottles I found in the garage. I did have 2 on Friday, just because I could, and since then I've had 1 a day. Drinking Pepsi has kind of fallen off my radar of things to quench my thirst since doing this challenge. But I still love it. I look forward to pocketing that $20/month and not having to take all those cans to get that deposit back.

Now, I am preparing for my next 30 day challenge; 30 days of vegetarian dinners. This does not mean 30 days of vegetarianism, although seeing as how I eat meat mostly only at dinner, it may end up being. With this challenge I hope to accomplish several things. 1. To learn some new recipes, 2. To save some money by not buying meat, 3. To try to lower my intake of fat and raise my intake of fiber and grains, 4. To see if not eating meat makes me feel any different, good or bad.

My rules are basically no fish or meat as part of the complete dinner. It begins September 14th.

Day 30 & 31

9/3-9/4

Finally, I can drink Pepsi again! I completed my initial challenge but am glad it's over. I have decided that I'm not going to buy Pepsi or soda any more, and will try to only drink it occasionally. I don't want an everyday Pepsi habit again.

On this day 31 I waited until the afternoon before I had my Pepsi. The first sips after 30 days without were kinda odd. It tasted so like caramel, it was a strange feeling. I think I've realized that while I crave it, I don't need it or even really like drinking it. I'm hoping that I'm over it. I have been drinking more water and milk and I've even been drinking juice more often. My teeth have felt vastly better this month, and even after having the 24oz I've drunk today I notice it's making my teeth feel gross and hurt again!

With the success of this challenge, I think I shall be partaking in several more 30 day challenges. Some of them may take a little planning or prep, but I think this was really good for me to know I CAN DO IT!

Day 28 & 29

09/1-09/2

I am so looking forward to Friday. I can drink a Pepsi again! A whole bottle of Pepsi. Mmm, mmm, mmm. Maybe I'll go buy a 2 liter bottle in celebration, except that I'm not allowed to buy anything that isn't essential this month as an 'unofficial' 30 day challenge. Sucky. Maybe I won't drink anything but Pepsi all day. I am very excited that I only have to get through one more day. Stupid excited. However, I still have no intention of buying Pepsi in bulk, but being allowed to have a sip every now and then, that's liberating!
